Bright, Refreshing, & Tart
This cocktail can be made with a spirit of choice, however, the cane rum and subtlety of pineapple act as a sweetening agent with the tartness of cherry to tie it all together. Maggie’s Farm Rum is Pittsburgh based and is one of the finest quality spirits you can grab.
1 oz Maggie’s Farm Pineapple Bark Washed Rum
.5 oz Lemon Juice
.5 oz Homemade Grenadine Syrup (See Below)
2 oz Tart Cherry Juice - no sugar added
3 Dashes of Angostura Bitters
Shake & Strain Over Pebble Ice
Garnish Cherry Skewer & Straw
Homemade Grenadine Syrup
It is a basic simple syrup recipe with a 1 to 1 ratio of sugar to juice.
1) Add 1 cup of Pom Wonderful to a pot on the stove ; simmer on medium heat while adding 1 cup of sugar. Stir until dissolved.
2) Let it cool completely and bottle - it will keep up to a week refrigerated.
Note: Tart Cherry Juice can be obtained at your local grocery in the Juice Aisle. Make sure to select the one that says “not from concentrate” & “no sugar added”.
Strawberry Lemonade - (Rocks Glass) - N/A
Semi-Sweet, Refreshing, & Balanced
This is one that goes down way too easily. If you wish to add a spirit to this we highly recommend a Ford’s Gin. This gin and its floral bouquet will shine brightest and add some depth as well as kick. Don’t be scurrrrred just add the gin we’re professionals remember.
Strawberry Lemonade (alcoholic)
Add Ice to your glass
1.25 oz Ford’s Gin
3-4 oz Strawberry Lemonade Batch (See Below)
Gentle Stir ; Garnish Mint Sprig
Strawberry Lemonade Batch
2 oz Strawberry Water (See Below)
1 oz Fresh Lemon Juice
1 oz Strawberry Simple Syrup 1:1 Ratio (See Below)
You will need 1.5 pint of strawberries for the water infusion & 1/2 pint strawberries for the syrup.
Strawberry Simple Syrup
1) Wash & Chop 1/2 pint of strawberries and set aside.
2) Add 2 cups of water to a pot on the stove with medium heat then add strawberry pieces to it.
3) Let the strawberry pieces become very soft and use a potato masher to extract flavoring from them. Once this is done add 2 cups of sugar to the pot and stir until dissolved.
4) Once dissolved turn on very low heat and simmer for another 10 mins uninterrupted. Then strain out solids and let it cool completely before use.
This will yield approximately 750ml and will keep for up to 1 week in the fridge.
Watermelon Margarita Bites
Fun, Interesting, & Damn Good!
Who cares about Jell-O shots when you can whip these masterpieces up quickly with minimal prep time. These are a must for any cookout! Make sure to grab a large enough watermelon because they will go fast!
Ingredients:
1 medium size watermelon cut into cubes
2 cups of El Jimador Blanco Tequila (100% blue agave)
1/4 cup of Cointreau Orange Liqueur
1 oz Simple Syrup
Instructions:
1) Grab a baking sheet and line it with tin foil, then arrange the watermelon cubes in a single layer on the sheet.
2) Put the remaining ingredients into a bowl and stir to mix.
3) Pour the mixture over top of the watermelon cubes
4) Refrigerate at least one hour up to overnight - serve cold
5) Right before service add some “Tajin” to the top of the pieces (this will add spice, salt, and citrus to make the bites pop)(optional)
Strawberry Water Batch (with sous vide)
1) Chop 1 pint of Strawberries into pieces. Be sure to always wash your fruit and remove the leaves.
2) Add 1 liter Fiji Water to Vacuum Seal Bag with strawberry pieces.
3) Cook on 140 degrees for 2 hours (this will infuse the water quickly)
4) Remove from water bath and double strain out solid pieces. Now you have your Strawberry Water
Without Sous Vide (The difference is time)
1) Grab a non reactive container and add 1 Liter of Fiji Water and Strawberry Pieces.
2) Let the mixture sit overnight and in the morning strain out solids.
